So, last weekend when the weather was warm, sky was clear, my family was engaged in outdoor fun activities, I decided to welcome them inside with this healthy and refreshing Apricot Cucumber Chia Smoothie.

Cucumber is a hydrating food with very low calories and perfect healthy food ingredient for summer, apricots are summer fruits and they add natural flavors to any beverage with its tangy, juicy and sweet texture and I added some soaked chia seeds to increase the protein content of the smoothie to make it filling and replenishing after sweating and coconut water is high in potassium and helps the body to fight dehydration in the summer months.

My family loved this idea of Apricot Cucumber Chia Smoothie after tiring outdoor sports. They enjoyed this beverage to their hearts content and they regained so much energy after drinking this that they went out for another round of biking :)

Ingredients

  • 2 tbsp. chia seeds
  • ¼ cup water (warm)
  • 1 whole cucumber (peeled)
  • 1 whole apricot (seed removed)
  • 2 cups pure coconut water

Instructions

  1. Soak chia seeds in warm water for few minutes.
  2. While chia seeds are cooling assemble all the ingredients in a blender and blend smooth.
  3. Lastly, add chia seeds to the blender and blend again as smooth as possible.
  4. Pour into serving glasses and enjoy chilled.
