Blueberry Salsa (No Tomatoes)

Ingredients

  • 1 cup fresh blueberries
  • 1/4 cup finely chopped honeydew melon
  • 1/2 cup finely chopped red onion
  • 1 whole jalapeno pepper (finely chopped)
  • 1 tbsp chopped fresh mint leaves
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt
  • 2-3 tsp lime/lemon juice

Instructions

  • Rinse the blueberries and gently pat dry them with a kitchen towel to absorb extra moisture. With a sharp knife finely chop the blueberries.
  • In a large mixing bowl, combine chopped blueberries, honeydew melon, onion, jalapeno, mint, cilantro and roughly toss them.
  • Fold in salt and lemon juice and mix well. Taste test and adjust the lemon juice as per taste. Let it sit for 1 minute for the juices to release. Mix again and serve with your favorite tortilla chips.

Notes

  • Measure blueberries before chopping.
  • use 1 whole jalapeno and include its seeds for the spicy kick in this salsa recipe.
  • If there is any leftover, you may refrigerate it in a glass container for 1-2 days. Mix well before serving because the juices makes it tastier.
  • If desired you may pulse the blueberries in a food processor once or twice depending on your desired texture. However, the chunky bits really tastes good. However, manually chopping the blueberries definitely tastes the best.
