Ingredients

  • 1/2 cup dry amaranth
  • 1 1/2 cups water
  • 1 cup fresh cranberries
  • 7 whole pitted dates
  • 2 1/2 cups unsweetened almond milk
  • 1 tbsp slivered almonds ( for garnishing)

Instructions

  1. In a saucepan combine water and amaranth. Then cook it on a medium flame until all water is absorbed and amaranth is chewy in texture. Once it is cooked turn off the flame and let it cool.

  2. In your blender combine cranberries, cooked amaranth, dates and unsweetened almond milk. Thereafter, blend it smooth.

  3. Afterwards, pour the smoothie in your choice of glasses and garnish them with slivered almond.

  4. Enjoy this smoothie immediately. 

Recipe Notes

This smoothie may be enjoyed as a smoothie bowl as well. After blending, let it sit for a few minutes until it thickens. Thereafter, you may top your smoothie bowl with your choice of fruits and nuts.
