I love including fresh vegetables into my dessert so that I can indulge guilt free. May be I have serious sweet tooth but I wonder what life would be without desserts? Well, I don’t want to think my life without these soft, mouthwatering and aromatic muffins and to top it all it’s so healthy.

Coming to the recipe my idea was to include iron rich vegetable in my dessert and yet wanted to present red colored muffins because red is the symbol of love and since we have red hearts all around us this February month I was even more determined to use Beetroot in my sweet dish. By adding whole grain quinoa flour these beauties were enriched with protein and good carbohydrates. After some more natural flavoring when my muffins went into the oven for baking the warm delicious sweet aroma filled my entire home and my mood was super uplifted with the outcome.
The challenging part was to hide it from my valentine 🙂 because Beetroot Quinoa Muffins is in my Valentine’s Day dessert menu. SSHhhhhhh!!!!!!!!!
I finished the whole batch myself and successfully hid it from him. 🙂 I am going to bake these healthy and guilt free muffins next week for my Valentine. What is on your menu?
