Beans Paneer Stuffed Millet Cups

Pearl Millet flour dough stuffed with kidney beans, paneer, some veggies and flavored with mild spices is a high protein and nutritious snack that can be eaten as evening snack with tea or served as appetizer to the guests.

Pearl Millet commonly known as Bajra in India is blackish grey in color and is highly favored in regular eating. It is low in calories with lots of health benefits. Pearl millet is not very expensive so it can be easily consumed in our daily eating routine. Pearl Millet is high in iron and helps our body fight with many diseases. It helps in lowering cholesterol and is a great source of antioxidant and has high fiber content. Above all Pearl Millet (Bajra) promotes weight loss and overall good health.

While walking through the grocery aisle my eyes fell onto the Pearl Millet flour (Bajra) and I remembered my mom trying very hard to feed me Bajra roti when I was a kid. I smiled at the thought that I used to run away because I wanted to eat some junk food like chips and soda. HAHAHA ! With time we all change and now I run after my daughter to feed her Pearl Millet in some form. I got the flour and instead of making regular roti I thought of making something more appetizing so that my family can consume Pearl Millet happily. I came up with Beans Paneer stuffed Millet Cups. This recipe is a complete package of protein, fiber, calcium and lots of flavor. With this one appetizer recipe I was able to feed my family a complete nutritious snack and I was happy that they did not ask for any junk food later. 🙂

Beans Paneer Stuffed Millet Cups

Ingredients

  • 1 cup pearl millet flour
  • ¼ tsp salt
  • 1/8 tsp baking soda
  • 1 tsp olive oil
  • ¼ + 1/8 cups warm water
  • 1 cup crumbled paneer
  • 1 cup kidney beans (boiled, rinsed and drained)
  • ¼ cup shredded cabbage
  • ¾ tsp salt
  • ¼ tsp chilli powder
  • ¼ tsp chaat masala
  • ¼ tsp garam masala
  • 1 tbsp. white sesame seeds (for garnishing)

Instructions

  1. Preheat oven at 350 degree Fahrenheit and prepare a cookie sheet with a liner and slightly grease it.
  2. In a mixing bowl combine the millet flour, salt, soda, oil and water and form into dough. Let it stand for 2 minutes.
  3. In the meantime combine kidney beans and paneer in the food processer and mix well. You can mash beans with hand as well and mix the paneer in it.
  4. Add rest of the spices and mix well with a spoon or with your hand.
  5. Divide the dough into 6 equal portions and divide the beans & paneer mix into 6 equal portions.

  7. Roll out one portion of the dough in a small round shape (size of your palm).
  8. Flatten the beans & paneer mix between palms and put it on the rolled dough.
  9. Then gently take both into your palm and for a bowl shape so that the beans and paneer mix is covered with the millet flour dough expect for the top portion.
  10. Place the snacks on the cookie sheet and bake in the middle rack for 30 minutes or until properly cooked.
  11. Take it out of the oven and let it cool for few minutes.
  12. Garnish with white sesame seeds and serve warm with ketchup.

Notes

Feel free to use any millet flour that is easily available.
